The winter season may end the farmers’ markets in some areas, but this doesn’t mean there are no good fresh vegetables to choose from – in fact, there are some vegetables and gourds that are seasonal specific to the winter season that are very nutritious, delicious, and can be used in dozens of ways at any time of the day. Remember – by working with the seasons by eating what is growing during that time, you are allowing your body to reconnect with nature’s processes while growing your own knowledge about how to do so more deeply.

All in all, winter isn’t so bad – the produce that tends to come at this time of year is heartier and can be easily made into enticing meals or snacks. Be sure to visit farmers markets if they are still on in your region and if not, ask your grocery store what’s in season for more choices.
